Prepare ahead of time..

Ahhh...It's a wonderful Friday morning. The pups allowed for me to sleep in until 6:30a (thank you girls), the sun is shining, and it's the first day off school. I've got some time on my hands before I go in so what to do? My usual breakfast consists of a ramekin of 0% yogurt (a bit of honey), 1 slice of Ezekiel bread w/ PB (organic of course), and a cup of coffee. I'm sick of the bread and out of yogurt.

I grabbed the steel cut oats, diced pineapple, mango, unsweetened coconut, organic 1% milk, and went to town. The steel cut oats called for 4c of water or milk....why not both? So I used a 2/2 ratio. While that was boiling, I cut up the mango. Does anyone know an easy way to do that? Now if you'd like, only add one fruit. Watch your fruit! They are full of sugar as well, thus carbohydrates. Follow the directions for the oats, but when it starts to thicken, add coconut. You don't like coconut? Add some almonds. Bring everything together and you have an awesome tropical breakfast that you can eat now and later for the week. It's shelf life is good for 1wk or you can freeze it. Yep, Spring is right around the corner!

Life's lesson: Use your time wisely. One of the biggest excuses I hear is that someone doesn't have time to do something. You always have time....it's how you prioritize your activity that may need some cleaning up. You can make a breakfast like this one weekend morning and use it all week. I challenge you to look at your schedule and point out some wasted time. If you have a hard time with this, let me know, I bet I can find it!

  1. Started diet today. Want to loose weight before the summer. My biggest problem is discipline and motivation. The diet is a contest so maybe this will motivate me into a new lifestyle change.
